Video: Chocoladeletter maken

Making your own chocolate letter has been on my list for a really long time. When Sinterklaas left our country last year, I started making a list for this year and this chocolate letter was certainly on it. Making a chocolate letter yourself is fun and you can also manipulate the result so that it tastes exactly how you want it. Ideal, right? I made my letter with coarse sea salt, slivered almonds and a little coconut and oh boy that letter was already gone that evening.

What do you need? (1 letter of 300 grams or 2 small ones)

  • 300 grams of chocolate of your choice (milk, dark or white)
  • 30 grams unsalted butter (10% of the weight of chocolate)
  • toppings to taste

1. Make sure the butter is at room temperature and beat it slightly with a whisk.

2. In the meantime, put 240 grams of the chocolate (80% of the total weight) in a bowl and melt this chocolate in a bain-marie over medium heat. Make sure the chocolate does not get too hot.

3. Remove the bowl from the heat as soon as the chocolate has melted and add the lightly beaten butter and the rest of the chocolate. Stir until all ingredients have melted and a soft and shiny mixture has been created.

4. Spoon the chocolate into a piping bag and then pipe chocolate letters onto a plate lined with baking paper.

5. Garnish the chocolate letters with toppings as desired.

6. Then place the letters in a dry, cool place to let them set completely. Then store the letters airtight in the refrigerator or in a dark cupboard.

    Uit hoeveel procent cacao moet een reep bevatten? minimaal 70%?

      In dit geval kun je kiezen wat je lekker vindt! Wil je een pure chocoladeletter dan kun je inderdaad het beste kiezen voor een reep met minimaal 70% cacao. Ik heb zelf een melkchocoladereep gebruikt, vind ik lekkerder.

  12. Kan je dit ook met cacaoboter maken i.p.v. met roomboter? Of zijn de verhoudingen dan anders.

      Nog nooit geprobeerd met cacaoboter dus daar kan ik je helaas niets over vertellen.
